EN 1.4116 martensitic stainless steel is used for high-quality knives, cutlery and surgical instruments. It is resistant to corrosion under kitchen conditions. Its chemical composition has been enriched with chromium, molybdenum and vanadium. The surface of the steel is ground, free from scale. The hardening temperature is 1030–1050C in oil; the tempering temperature is 100–200C. We usually harden this steel to 59HRC. Chemical composition of the steel: C 0.5% – Si 1% – Mn 1% – Mo 0.7% – Cr 14.5% – V 0.2%.
